Creamy White Wine Chicken

In a hurry or need a dinner option for busy weeknights? Look no further than this Creamy Chicken dish, which can all be made in one pan and takes under 30 minutes to prepare and cook. We use chicken breast for this recipe, but you can substitute chicken thighs if you prefer.
Ingredients
- 2 x 280 g Chicken Breast, Thinly Sliced
- 3 Small Brown Onions, Diced
- 1 Shallot, Diced
- 2 Spring Onions (Dice the white stems, thinly slice the green parts)
- 1 tbsp Minced Garlic
- 2 tsp Dijon Mustard
- 40 g French Onion Soup Mix
- 150 ml Sour Cream
- 1 cup White Wine
- 1 cup Chicken Stock
Instructions
- Heat a frying pan over medium heat and sweat the onions, spring onions, and shallot until translucent. Add the garlic and cook for an additional 1 minute.
- Stir in the Dijon mustard, then add the chicken and cook until browned, about 3 minutes.
- Add the French onion soup mix and stir to incorporate.
- Pour in the white wine and cook on high heat until the wine reduces to a syrupy consistency.
- Pour in the chicken stock and reduce in the same way as the wine.
- Once the chicken stock has reduced, remove the pan from heat and let sit for 1 minute. Stir in the sour cream.
- Garnish with the thinly sliced green parts of the spring onion and enjoy!
Notes
- Seasoning: The chicken stock and French onion soup mix contain salt, so no additional salt is added in the recipe. If using salt-reduced products, adjust seasoning to taste.
- Chicken: Chicken breast cooks quickly and can dry out, but the sour cream helps keep it moist. Alternatively, use chicken thighs, noting that cooking times will vary.
- Herbs: No additional herbs are used in this recipe, but you can add finely chopped parsley, tarragon, thyme, or chives when adding the chicken stock for extra flavor. This dish is already quite flavorful on its own.
