Ingredients
1250 Kg Bread Flour (Or All purpose)
437.5 ml Water, warm
250 Ml Milk, 35’c
11.5 G Salt
7.5 G Golden Syrup
7.5 G Sugar
12.5 G Yeast
125 G Butter, Softened
10 G Bread Improver (Optional)
2 E Eggs
Instructions
- Soften the butter, but don’t melt it.
- Weigh all dry ingredients into a bowl of a mixer.
- Heat the milk to 35’c then stir in yeast and the sugar. Set aside until the mixture starts to foam. (Indicating Yeast Activation)
- Add the water, golden syrup, egg and butter to the dry ingredients and mix on low.
- Once combined add the warmed milk, yeast mixture. Then mix on low for 1 minute.
- Turn the mixer onto 2 speed or medium, knead for 8 minutes.
- Cover the mixer bowl and set aside to prove for 1 hour.
- Take the dough out and knock back, taking all the excess gasses out of the dough. Size into desired shapes, place onto a pan with baking sheet or into moulds. Let proof for 30 minutes. Preheat a conventional oven to 200’c. Before adding bread into the oven, splash some water in, this will generate steam.
- Place the bread into the oven and back until done. If making rolls around 100 – 120 Grams this will take 15 – 20 minutes.
- Timings may vary depending on bread shape, size, and oven.
- Once cooling, brush with a mixture of melted butter and milk.
- Allow to cool and rest. Then enjoy!
Notes
Milk – If you don’t want to add the milk into the recipe you can substitute by adding in 17.5 G of Milk powder and simply using all water for the liquid. Do continue to heat the water to 35’c.
