Quick Frittata

A quick Frittata using simple ingredients and is divine. Sure to be a success. This is a great recipe you can customise to your liking. Use those leftovers and invent a frittata with them.

Ingredients

7 Eggs

2 Red Capsicums, Diced

2 Cloves Garlic, Diced

34 Tsps Paprika

1/2 Tsp Garlic Powder

1/4 Tsp Onion Powder

1/4 Tsp Chili Powder

4 Tsps Dried Parsley

1/4 cup Milk

150 g Cup Mushrooms, Diced

1 Tbsp Butter

1/4 cup Grated Tasty Cheese, or as desired.

Salt and Pepper to taste

Controversial ingredient – 1/2 Tbsp Honey

Instructions

1. Preheat oven to 170’c (Fan Forced). Grease a baking dish / ramekins / or alternatively this can all be made in one pan.
2. Add olive oil into pan and lightly saute for 3 minutes until translucent then add in the freshly diced garlic. Add the spices and herbs cook for a minute. Then add the capsicum and continue to lightly saute. Cook for further 2 minutes (May take longer depending on how big you cut them).
3. Then add in mushrooms and butter turn up the heat, cook these on high heat for 1 -2 minutes. Add the honey after 1 minute.

4. Whisk eggs and milk together. Add the cooked mixture into the baking vessel you have chosen, sprinkle with cheese, you can use any cheese you desire at this point. For this application we used tasty cheese.

5. Lightly pour in the egg mixture and spread if necessary. Then place into preheated oven and bake for 15 – 20 minutes. To test if the frittata is ready give the tray a jiggle. If it is really wobbly then give it longer. (See note 1).

6. Once you take out the frittata, let it rest for 5 minutes. Then start serving this quick nutritious dish.

Notes

Note 1: 
If the top is browning to fast. You can take it out and cover it with foil, as well as turn the oven down 10’c. Baking time can vary depending on your oven. We use an Anova precision oven.
