A yummy breakfast or brunch! If it doesn’t work then this recipe also doubles as scrambled eggs, how convenient.

Omelette

A lovely egg dish that you can fill with a different diced vegetables, bacon, chicken and whatever your imagination can conjure up.

Ingredients

Scale

1/2 Large Onion , Diced

1/2 Large Capsicum , Diced

3 Eggs

2 Tbsp Water

3 Cloves Garlic, Diced

1 Rasher Bacon, Diced

1 Tbsp Butter

Seasoning to taste

Instructions

1. Heat 15cm pan to medium high and coat with olive oil. Whisk the eggs and water together.

2. Add onion and seasoning to the pan and cook until translucent about 1 – 2 minutes.

3. Add bacon and cook for 1 minute before adding  garlic. Cook briefly then add capsicum and butter. Cook mixture until vegetables are tender. Spread out the mixture that it coats the bottom of the pan.

4. Pour in egg mixture. You want to use a spatula to spread the eggs as it cooks. Reason we do this, is to allow the egg on top to be moved to the bottom and cook as well. Swirl the pan every now and then to stop the omelette from sticking. Once you have just a little uncooked egg on top, sprinkle the cheese on one half of the omelette.

5. Now for the tricky part. I cut the omelette in half before attempting the fold. When in half, I use a spatula to flip the side without cheese onto the other. Then cook for 1 more minute. Once cooked carefully transfer to a plate and enjoy.

Notes

Method 2

Another method you may want to try is to preheat your broiler. Follow the recipe above, but instead of covering half the omelette with cheese. Cover the whole omelette. In this method you do not need to fold it. Place the pan under the broiler very carefully, allow cheese to melt and slightly brown. Then when  omelette is taken out, slide it onto your plate. When using this method if you have a plastic handle ensure not to put that under the broiler. Wear protective gloves when removing the pan.
Chaos 

If the omelette breaks when flipping or taking out. Its not the end of the world. You can smash it all up into a scramble and enjoy them that way. I like to scramble the broken omelette, place onto a piece of toasted bread, top with cheese and finish under the broiler.

Creative

With this recipe you can go on to create all different kinds of omelettes. For example we love to make a “Beetroot, Feta and Spinach” omelette. Herbs is another way you can take this dish even further.
